I have some news for you, dear readers: Nathaniel and I are moving again. We are Boston bound! He will be starting his doctoral studies at Boston University, and I will be working with the Boston Children’s Chorus. So many exciting new opportunities and unknowns ahead of us. Good thing I like roller coasters:)
I’ve been reflecting on my blogging journey and where I began just one year ago. I started my blog while spending a dream-like summer in Aspen, Co…and where I had almost no kitchen utensils or appliances at all! Food has always been a passion of mine, but I never knew what role it would take in my life.
I have loved this journey sharing my experiences with you. It has challenged my creativity, my ability to plan ahead, my willingness to be open, and my commitment to always be improving. I haven’t always been able to write as much as I’ve wanted, but I only share what I hope you will love. These next few weeks will provide extra challenges to my writing as we will be moving and apartment hunting–emphasis on the word hunting!
So for those busy, busy days when we need something simple, fresh, and nourishing, I hope you will love this summer salad like I do. Peaches, avocados, tomatoes, and arugula with a cilantro, chile-lime dressing. That’s it! It takes maybe 10 minutes, and it shows off all of summer’s best fruits:)
Summer harvest fruit salad
1 ripe peach, sliced
1/2 avocado, diced
Handful of cherry/grape tomatoes cut in half
Generous handful of arugula
1 tbsp. + 1 tsp. olive oil
1 tsp. lime juice
1 tsp. chopped cilantro
Pinch of red pepper flakes
Salt and pepper, to taste
Arrange fruits nicely on bed of arugula. Whisk all dressing ingredients until combined. Drizzle over salad and gently toss.
